Originating in Rome's Jewish Ghetto, this dish is simplicity at its most brilliant. Whole artichokes are trimmed, flattened, and fried twice in olive oil until the outer leaves turn shatteringly crisp while the heart stays tender. Best eaten fresh from the pan in Trastevere.
