Tuscany is one of Italy's great truffle regions, producing both the precious white truffle of San Miniato and the earthy black Norcia variety. Hunters work at dawn with trained dogs through oak forests, and the results end up shaved generously over tagliolini, scrambled eggs, or warm crostini.
