
Pizza Fritta

Born in post-war Naples when wood for pizza ovens was scarce, pizza fritta is made by folding the dough over a filling of ricotta, cicoli (pork scratchings), and black pepper, then frying in hot lard or oil until puffed and golden. Still sold from street carts in the Quartieri Spagnoli.
